Credentialing Exam Preparation
Length of Training Program
  • 120 hours of classroom instruction.
  • 150 hours of field learning experience under the supervision (50 hours direct supervision of nutrition related experience) of a Registered Dietitian with a minimum of 1 year post registration competency as Preceptor in a work facility.
Registration Procedures

The Dietary Manager Training program has specific registration and payment procedures. DO NOT follow the regular application and registration process for other programs.

  1. Complete the Dietary Manager Training Program Registration Form and mail the Registration Form with payment to the Saint Paul College Tuition Office. Follow all instructions on the Dietary Manager Training Program Registration Form.
  2. Complete Forms A, B, and C and bring them with you to your first class session.
    • Form A: Agreement of Health Care Institution for Student Participation in Dietary Manager Program Field Learning Experience
    • Form B: Employer Recommendation
    • Form C: Field Experience Facility Information Sheet
Overview

The Saint Paul College Dietary Manager Training program is designed for individuals seeking the following:

  • Dietary Managers seeking membership and credentialing examination eligibility in the Association of Nutrition & Foodservice Professionals (after successful completion of the training) or who can benefit from more formal education; other dietary personnel with supervisory potential desiring an educational experience to train themselves to be responsible for the management of food operations in health care facilities.
  • Students interested in a training program approved by the Association of Nutrition & Foodservice Professionals which meets the ANFP Dietary Manager Training Program requirements and fulfills Minnesota State Department of Health and Federal Requirements for education of Dietary Managers.

Students are eligible for the credentialing examination preparation course and active ANFP membership after completion of Dietary Manager 1 and 2.
